Sorry for the delayed response.  The price fix at R110 would be perfect.  We
will be sure to get a non-dairy dessert solution from one of our suppliers
to satisfy those that may be lactose intolerant.  I will let you know
exactly what we come up with after I speak with them.  As far as the
starters are concerned, we were thinking of setting those out in a buffet
style, allowing the guests to grab plates and take what suits them.  If you
are afraid that this may cause some dissatisfaction among the guests, we
could simplify things by offering fewer options as starters.  This would
allow us to distribute the appetizers evenly about the tables without
creating a huge problem for the kitchen.  To try and separate the current
platters on option into evenly dispersed amounts across ten tables would be
difficult for the kitchen.  However, if we just offer poppers and wings (or
maybe the mezze platter) we could easily break them down into accommodating
portions for each individual table.  The poppers are vegetarian but not
dairy free as they have cheese stuffed inside them.  Let me know which one
you think would suit your needs best.

Thank you for the menu---it look brilliant!  I've forwarded the menu on to
the other people on the organisers' mailing list.  I've already received
some comments which I have to pass on to you.

   - First of all, fix the price at R110 per person.  That should take care
   of the food and the gratuity, and keep everything simple for everyone.
   - Everyone also knows that drinks are excluded.  Can we perhaps make an
   arrangement that all drinks are to be bought from the bar?  That way it
   wouldn't be necessary to add it to the bill and complicate things.  (Or, if
   possible, have the waitresses bring the drinks on a cash-up-front basis?)
   - We would very much appreciate the use of the projector, sound board and
   microphone, thank you!
   - At least three people have voiced concerns about the ice cream, mostly
   due to some people who are lactose intolerant.  Is it possible to provide an
   alternative to ice cream, like a fruit salad or sorbet?  Alternatively, if
   this could potentially mess with the price per person, could you perhaps
   provide an alternative to only a handful (say, five people)?
   - Could you perhaps elaborate on the starters?  How do you propose they
   be distributed across the tables?  How many people will be able to be seated
   per table?  The efficacy of "shared food" is going to depend on table size
   and layout.  I know from experience that your platters are quite large and
   sufficient for sharing, but we just need some clarity on this matter.

Hello Wessel,



I have put together a menu for you guys.  Take a look and let me know if you
have any questions or concerns.  For the starters we have gone with the
platters, which are much larger than our regular appetizers.  They feed 4
people or more depending on one’s appetite.  For the main course we have
listed several options for people to choose from.  I checked out your Wiki
page and it looks like most people don’t mind the meat but we have put quite
a few vegetarian options on there as well.  For desert we have the classic
vanilla ice cream with Bar One sauce. It works out to being R100 per person
not including drinks.  This also does not include any gratuity for the
waitresses.  We normally add 10% to groups of 6 or more.  How have you guys
worked out the gratuity with the other venues in the past?
