I also received this (see below) so it looks like we're going source the 
equipment ourselves.

Who's going to run with this? Any ideas who we can approach for the 
second projector?

Regarding the equipment : we can outsource the equipment for you. We advise
that it is done by yourselves as we find that it's a far cheaper option. We
use the Waterfront technical support team who charge us, we also find that
with a such events security of the equipment often is an issue. Our
insurance does not cover items that we not liable for.

Pieter has advised me that your date may change. Please can you let me know
your new dates so I can check availability of the private dining rooms.
